Road testing some vegan recipes so that I have something to offer Kath next time she visits :-)
Sweet Potato, Chilli and Apple Sauce Burgers served with Cauliflower Moroccan Rice. The "rice" contains, spring onions, cashews, raisins, dessicated coconut and spices. The meal was labour intensive largely due to the frying of the burgers but it was worth the effort. The whole meal was declared a hit by one and all :-)
Pitter, patter ...
... and then the rain came down! Dave and Ben were sheltered under the big parasol, which unfortunately did not stretch to cover Pip or myself. Time for lateral thinking and so with careful balancing, we all managed to finish our meal relatively dry!

This looks so funny, San! Why did she become vegan? This seems to be much more fashionable in Europe than in the U.S.

Kathryn felt uncomfortable about eating meat and also has a dairy intolerance like myself so Vegan was the only way to go. Yes, the pictures make me smile, nothing so whacky as a British sense of humour!!

There's lot of vegans in NYC! I used to be one myself :) I gradually changed after Korrina was born as she had a soy allergy and she loved meat. However, I do remember her attending a Waldorf coop preschool where the hosting mom wanted to put honey in the tea and I requested that she not do so. Oh my goodness! I was so strict! Eating in the rain looks so fun and this meal looks so delicious! Is it from the BBC website?

LOL funny how we change over time! The cauliflower rice was from the Deliciously Ella with friends book. The burgers were a make it up as you go! I normally use an egg to bind but know that apple sauce has the same effect so I added that instead. The apple sauce added a lovely caramilsed sweetness as a result of the extra cooking.
A sheer stroke of genius on Pip's part and a lovely funny reminder of the day :-) x
